Canadian Rocky Mountain Resorts launches newest restaurant - THE RESTAURANT at Painted Boat.
THE RESTAURANT at Painted Boat is the newest addition to Canadian Rocky Mountain Resorts' family of award-winning restaurants. The 70-seat contemporary bistro features chocolate brown leather seats, deep espresso tables and tiger bamboo flooring. There is also a lounge available for private dinners of 6-12 guests, and a meeting space available for weddings or conferences which may seat up to 70 guests.
Open for lunch and dinner, the casually elegant restaurant has a distinctly modern, coastal feel. Head Chef David Cox and his team are focused on highlighting the abundance of fresh, local ingredients available on the Sunshine Coast to create a vibrant and approachable regional menu.
Born in Calgary, Chef Cox has travelled the world developing and perfecting his technique. From being the private chef for a minister of parliament in Moscow to working as Head Chef at Muse Restaurant when it was named one of the 'Best New Restaurants in Canada' by Enroute Magazine in 2002, the classically trained chef has developed a light yet nourishing style that remains true to his love of French technique, while always exploring the best ways to bring out the flavours of the foods he is working with. Chef Cox has spent the last several years as Sous-Chef at Calgary's sophisticated Divino Wine & Cheese Bistro.
THE RESTAURANT at Painted Boat promises to become a favourite haunt of locals and visitors alike, who will appreciate the stunning views from the waterfront deck as they linger over a glass of carefully chosen wine and sample the array of fresh and creative dishes on Chef Cox's menus.
